Sausage and cook in a pan with some olive oil. Mix in vegetable when close to done and cook until meat is lightly browned. Place in a crock pot with tomato past and seasoning. Add rice and water (2 cups water per cup of rice) simmer on low for several hours until rice is done. Stir occasionally.
Dice onions and veggie sausage and saute in oil. Mash sausage (just a little) to the consistency of ground beef. Add tomato paste and a little water. Add garlic (diced or pressed) and diced red pepper and celery. Add seasoning to taste.

This makes a lot and does not keep well after the rice is added. Set aside all but enough for one meal. Combine 2 parts jambalaya with 2 parts water, and 1 part white rice or 3 parts water and 1 part brown rice in a covered pot. Bring water to a boil, stirring occasionally, then reduce heat to lowest setting, continuing to stir occasionally. When it starts to stick to the pan, turn the heat off completely. It will continue to cook itself for a while and the rice should be done after about 10 minutes.

A note to the reader. This recipe is very imprecise and very forgiving. The proportions don't really matter. Go light on the seasoning and sample along the way on the principle that you can add more seasoning, but you can't take it away.
