Cook lentils in pressure cooker, about 20 minutes. Remove and cook potatoes and garlic separately with 1 cup water, 13 minutes. Cook eggplant by wrapping in foil and cooking on stove for 30 minutes, turning every 5 minutes. Carrots will be uncooked, but grated. Use frozen corn.

First batch was rough. Make sure the lentils are thoroughly cooked before proceeding. They also came out wetter than I would like.

To remedy this, the best approach was to put some of the "batter" in a frying pan and cook and mix it until the texture was a little chunky then form burgers in the pan, sear the outside and finish in the oven. Even at that, they were a bit soft.

Making the patties is a pain - I'd like to try using a PVC pipe to form them, but I'd need a way to push them through.
