Sausage and cook in a pan with some olive oil. Mix in vegetable when close to done and cook until meat is lightly browned. Place in a crock pot with tomato past and seasoning. Add rice and water (2 cups water per cup of rice) simmer on low for several hours until rice is done. Stir occasionally.
Dice sausage and mash lighly to consistenc of ground beef. Cook in a pan with some olive oil and the onions (diced). Mix in vegetables and seasoning when close to done.

This makes a lot so set aside all but enough for one meal (onece the rice is added, it does not keep well). Combine 2 parts water, 1 1/2 parts jambalaya and 1 part rice. Bring water to a boil then cut heat to lowest setting stirring occasionally. When it starts to stick to the pan, turn the heat off completely but let itt sit for a few more minutes, until rice is thoroughly cooked.

A note to the reader. This recipe is very imprecise and very forgiving. The proportions don't really matter. Go light on the seasoning and sample along the way on the principle that you can add more seasoning, but you can't take it away.
