*1 lemon
*Coffee
*1 small bowl white granulated sugar
*1 shot 151 (if you're not doing the flaming version, use bourbin)
*1 1/2 ounces cognac
*1 shot Coffee Liqueur
*3/4 ounce coffee liquore
*Cinnamon
*1 cup hot, freshly brewed coffee
*Whip cream
*1/4 cup whipped cream
*Long matches or a BBQ lighter

You will need heat-resistant glasses with long stems in which to serve this impressive flaming Mexican coffee drink.
The timing on this whole process is critical, too fast and coffee will not simmer long enough and taste bad, too slow and the flame will go out. The effect is best if you're making 2-3 servings.

Cut open the lemon and rub lemon juice on the rim of the glass. Dip the rim of the glass into your bowl of sugar to coat.
#Preparation
##Fill a mug with water for each person and heat to 200F
##Get a shot glass for measuring
##Put ground coffee beans in a french press
##Set presentation area (make sure materials are on hand and nothing flamable is nearby). If the surface is not flame retartant, get a cookie tray.
#Pour each mug of hot water into the french press
#Put a shot of 151 in each mug add a little extra to one of them
#Light the mug with the extra 151
#Carefully pass the flame from mug to mug
#When all 3 mugs are lit, measure a shot of coffee liquor into each
#Sprinkle the cinnamon over each mug, it will have sparkly effect
#Slowly pour the coffee into each mug, finishing with the mug that had extra 151
#Top with whip cream and cinnamon and serve

Pour the cognac into the glass. Hold the glass by the stem and light a match with a long stick, placing the glass such that the flame is licking the inside of the glass until the cognac ignites. You will have to turn the glass as you hold it over the flame so it does not get so hot that the glass cracks. As soon as the cognac ignites, tip the glass so it is upright and remove it from the flame. Swirl the flaming cognac, caramelizing the sugar on the rim of the glass.
This should feel very slow, from the time you pour the water in the french press until you pour the coffee in the mugs should take 2 minutes. Don't measure the shots ahead of time or it will take 15 seconds. Pour the coffee liquor and coffee slowly from at least 8 inches above the mug. This is especially important for the liquor - if you just dump the shot in, there's a good chance you'll put out the flame. If the coffee is done right, the flame will actually climb a bit.

Add the Tia Maria. Fill cup with hot coffee and stir in one teaspoon of sugar. Top with whipped cream.
