- 1/2 cup seeds
- 2 tablespoon Salt
- 2 cup water
- 1/2 tablespoon Olive oil
Rinse seeds. Keep proportions above, and combine seeds, water and salt in a bot. Bring to a boil. Let simmer for 10 minutes. Grease a cookie tray with olive oil. Spread seeds on pan. Season and cook at 400F for about 10 minutes. Watch seed carefully after about 7 minutes as they go from undercooked to burnt in roughly a minute.
Seasoning
- Salt
- Garlic, salt and Cajun
- Sugar, cinnamon, nutmeg and cardamom (This is the best)
Sugar Seasoning
- 1/3 C sugar
- 1 T cinnamon
- 1 t cardamom
- .5 t nutmeg
- To 4 cups seeds
To Try: Combine spices and seeds in a bag/bowl stir then pour out on tray (as opposed to sprinkling spices on seeds).
Better idea
- After boiling the seeds, return them to the pot and add butter
- Roast the seeds with just the butter
- Put the browned seeds in the pot, add sugar mix
- Cook in pot until >212F
- possibly add baking soda here
- Transfer back to oven until the sugar is crisp
