Tahini
- 1 C sesame seeds
- 1/4 C olive oil (try others?)
Toast sesame seeds until they become fragrant and start to change color. Put oil in blender and add seed a bit at a time.
TODO: measure output, for mass recipe.
Chickpeas
- 1 lb chickpeas
- 1 t baking soda
- Pressure cooker, 30 minutes
Notes: I couldn't find a really solid resource on this, instead it's sort of cobbled together from a few.
If it doesn't work, try soaking the beans for 6-8 hours, draining them, mixing in the baking soda and cooking in a skillet for a few minutes before putting them in the pressure cooker. If the beans are pre-soaked, they should only have to cook for 15 minutes.
Hummus
- 1/4 C tahini
- 1/4 cup Lemon juice
- 1/2 t Salt
- 1/2 t cumin
- 2 T olive oil
- 3 T water
- 1 medium Garlic cloves
- 2 C cooked Chickpeas
- Place everything but the chickpeas in the blender. Blend until smooth
- Add chickpeas, a little at a time blending until smooth each time
Optional: remove skins, makes a smoother hummus
Todo: measure 1lb cooked chickpeas.
