Chickpeas
- 1 lb chickpeas
- 1 t baking soda
Notes: I couldn't find a really solid resource on this, instead it's sort of cobbled together from a few.
Last attempt was to soak the beans with 1 t baking soda, rise them and cook with another t of soda for 15 minutes. This still over cooked the beans and caused an overflow. Next time, soak with 1 t of baking soda and cook for 10 m with no additional baking soda.
Hummus
- 2/3 C sesame seeds
- 1/2 cup Lemon juice
- 3/4 t Salt
- 1/2 t cumin
- 1/3 C olive oil
- 3 T water
- 3-4 medium Garlic cloves
- cooked Chickpeas (1lb dry)
- Place everything but the chickpeas in the blender. Blend until smooth
- Add chickpeas, a little at a time blending until smooth each time
Optional: remove skins, makes a smoother hummus
Todo: measure 1lb cooked chickpeas.
Last batch came out very thin, hold off on adding water until mixing is underway.
