  • 1/2 cup seeds
  • 2 tablespoon Salt
  • 2 cup water
  • 1/2 tablespoon Olive oil

Rinse seeds. Keep proportions above, and combine seeds, water and salt in a bot. Bring to a boil. Let simmer for 10 minutes. Grease a cookie tray with olive oil. Spread seeds on pan. Season and cook at 400F for about 10 minutes. Watch seed carefully after about 7 minutes as they go from undercooked to burnt in roughly a minute.

Seasoning

  1. Salt
  2. Garlic, salt and Cajun
  3. Sugar, cinnamon, nutmeg and cardamom (This is the best)

Sugar Seasoning

  • 1/3 C sugar
  • 1 T cinnamon
  • 1 t cardamom
  • .5 t nutmeg
  • To 4 cups seeds

To Try: Combine spices and seeds in a bag/bowl stir then pour out on tray (as opposed to sprinkling spices on seeds).

Better idea

  • After boiling the seeds, return them to the pot and add butter
  • Roast the seeds with just the butter
  • Put the browned seeds in the pot, add sugar mix
  • Cook in pot until >212F
  • possibly add baking soda here
  • Transfer back to oven until the sugar is crisp
