In pint mason jars. Last batch I did 1T of sugar and 1t of vanilla.

Last used recipe

  • 1 T sugar
  • 1 t vanilla

That is per pint jar. I only filled the jars about 2/3 with rye. While I've made this a few times, I haven't recorded this before, so it may need to be tweaked.

It takes about 30 cherries (maybe a few more) to fill a pint jar. Pitting the cherries splashes juice everywhere so it's best to do it in a deep container. It's faster to stem all the cherries first.

The pitting process leaves a lot of juice and a bit of flesh behind so I've tried a "pit jar" that just has the pits in whisky with some sugar an vanilla. I plan on straining it after a few days and seeing if it makes something good, but there is a chance the pits will leave a bad flavor.

In 2020 cherries were about $2/lb right after 7/4 and went up to $3/lb less than a week later.
