Merguez

  • 1/2 t whole cumin seed
  • 1/2 t whole coriander seed
  • 1/2 t whole fennel seed
  • 1 t paprika
  • 1 t cayenne pepper
  • 1 lb ground lamb
  • 1 t minced garlic
  • 1 t salt
  • 3/2 T harissa
  1. Toast and grind coriander, cumin and fennel
  2. Combine all and fry in shallow oil

If making harissa at the same time, the spice could be roasted together.

Harissa

  • 1 red pepper
  • 1/2 tsp coriander seeds
  • 1/2 tsp cumin seeds
  • 1/2 tsp caraway seeds
  • 1 1/2 tbsp olive oil
  • 1 small red onion, coarsely chopped (scant 2/3 cup / 90 g in total)
  • 3 cloves garlic, coarsely chopped
  • 3 hot red chiles, seeded and coarsely chopped
  • 1 1/2 tsp tomato paste
  • 2 tbsp freshly squeezed lemon juice
  • 1/2 tsp salt
  1. Sear red pepper, remove skin, steam
  2. Toast and grind coriander, cumin and caraway
  3. Fry onion and garlic, almost carmel
  4. Combine all in food processor

Replace caraway with fennel?

Ghallaba

  • Carrots
  • Red pepper
  • Onion
  • Mushroom

I can't find a good recipe for this, need to experiment.

  • Lots of oil
  • lots of garlic
  • oregano?
  • cumin?
  • ginger?
  • cinnamon?

A lot seem to reference Arabic seven spice directly or indirectly.
