Plum Wine
I've made this before, but I don't have notes on it.
2018
Lowest price I saw was about $1.60/lb, but I wasn't watching closely. I made a small batch.
2019
7/28 plums were $1/lb. These were much larger than the plums I'm used to, and they have white flesh, so the wine will probably not be as colorful. I bought 6lbs to make 1gal.
7/29 On the large plums, I could cut up one in 55s. I add 1tsp of pectolase.
8/1 I crushed the plum by hand, ran it through a sieve then ran it through a nylon bag. I got 1 gallon of juice at 4%PAV. I added 1.25lbs of sugar 9%PAV. Added 1tsp of yeast nutrient.
8/8 Racked the peach. I add 4oz of sugar. It had an odd taste, a bit of sulfur, but I'm hoping that will clear up. Even after several hours it was not bubbling very much. I'm wondering if the yeast converted all the sugars and will take a little while to start back up.
