Gravy seems to just be flour, butter and milk to make a roux then add cooked breakfast sausage and seasoning.
Finely dice onion. Cook in 2T of olive oil on med-high until it starts to brown. Add sausage separately and break it up into small pieces with a fork. While that is cooking, put butter and milk in another pan and heat on low until butter is melted. Add flour and thicken to a roux. Add seasoning, syrup and sausage/onion mix. Server over biscuits.

Try adding Worcestershire sauce or nutmeg.
