Using concord grape juice makes a decent wine. A little plain and a little sour. Want to try deacidification and adding oaking.

Per gallon of juice

  • 1 t yeast nutrient
  • 1/2 t wine tannin
  • 1 t citric acid

Add Sugar to get to about 15% PABV. I added some oak last time, but it hardly made a difference. Try 15g/gal next time.

Current Batch

Started at 8% PABV = 720 g/gal, goal is about 16% PABV = 1417 g/gal. D = 697 g/gal, at 6 gal, = 4Kg in 3 batches
